Malaki Craft - Executive Chef, Rick Erwin's Clemson

Chef Malaki Craft’s culinary journey began at the age of 15 when he entered the hospitality industry, starting as a dishwasher at an Asian bistro. Over the next few years, he steadily ascended the ranks, transitioning from a cook at his father’s kitchen at a country club. After high school, Chef Craft pursued his passion and graduated from the Culinary Institute of America at Greystone in Napa Valley, CA.

Chef Craft’s culinary career has taken him across diverse culinary landscapes, from Louisiana to Napa Valley, and South Florida to Jupiter, Florida. Seeking new horizons for his growing family, he made Easley, SC, his home and assumed the role of Executive Chef at Rick Erwin’s Clemson in 2021.

For Chef Craft, the allure of the culinary world lies in the controlled chaos of a busy service, where everything operates like a well-oiled machine. His favorite dishes to create are charcuterie and fresh pasta, reflecting his dedication to precision and innovation.

Now overseeing culinary operations at Rick Erwin’s Clemson and The Vista, Chef Craft’s goal is clear—to provide guests with a memorable experience that far exceeds their expectations. He strives to cultivate an environment where patrons can have a great time, enjoying the culinary delights crafted under his expert guidance. Meet Eric Holton, the dedicated General Manager at Rick Erwin’s Clemson, a seasoned professional with 20 years of experience in the hospitality industry. Hailing from Southern Georgia, Eric is not just a skilled manager but a proud father to his 13-year-old daughter.

Eric’s passion for his role goes beyond the routine aspects of restaurant management. For him, the true joy lies in working with people, ensuring that every guest departs the restaurant happier than when they arrived. His commitment to creating a positive and memorable dining experience is reflected in his genuine enthusiasm for meeting a diverse range of interesting patrons, including media personalities, athletes, and coaches.

One of Eric’s most rewarding aspects of his role is the opportunity to be a positive influence on the young adults who work in the restaurant. He takes pride in fostering a supportive and growth-oriented environment for his team.

Working with talented bartenders and chefs has been a transformative experience for Eric, contributing to his continuous improvement as a restaurant manager. Being part of a company that relentlessly strives for excellence has further fueled his passion for the job he loves.
